The Red Cadillac, Mexican Grill concept is being driven by me, Joseph Montes.  I spent 30 years in the hospitality industry and I am now ready to start the engines on my favorite cuisine...Mexican. I first fell in love with Mexican Food after I took a trip to Houston, Texas for the weekend and stayed for 5 years. There I managed and operated El Torito's Restaurant, which is now part of the Chevy's concept, that I help create. I then left Houston to open The Cadillac Bar in New York City.  The Cadillac Bar quickly became a hot spot for celebrities as well as everyone else in the City that wanted great Mexican food & fun. 
I then teamed up with my brother and opened 2 very successful Spanish Restaurants in New Jersey. From 1987 to 2005, Primos Restaurant (that’s where The Red Cadillac will be) and Tavern In The Park, & served incredible Spanish cuisine with an American flair. In 2005 I cashed my chips in and semi-retired.   For the next 4 years, I began a consulting for restaurants, thinking it would be easier to do it for someone else.  I was wrong. 
After working with and becoming friends with Chef Ralph Pagano, from Hells Kitchen, we collaborated to create a Fresh Mexican street cuisine for the East Coast.  For the food, we will only use the freshest products available. That's our goal and we're stickin' to it. Our staff will be a crew of young Americans looking to show off their talents in the service industry. Inside you will get an Americana Garage feel. All servers will be dressed in designer "Garage Gear" and throughout the restaurant you will see Cadillac memorabilia.  The name Cadillac has become synonamous with "Top of the Line" or "The Best" and that's our goal. The cocktails will also be made as fresh as possible. Using seasonal ingredients and many house infused nectars &  liquors. So please send me your comments & suggestions and follow the process, as I document The Red Cadillac’ ride into Union, New Jersey on a daily basis, from now ‘til......we’re done driving !!!!!
